Here I'd like to tell you a little bit about me, my career in the catering industry and everything that has brought me to where I am today. I trained at Thomas Danby College under the guidance of David Box, an esteemed professional having worked at Claridge's and alongside Raymond Blanc. I completed my Professional Kitchen Diploma level 3. I began my professional career at Malmaison Brasserie Leeds learning important culinary skills including matching flavours and textures.
I worked in various sections of the kitchen enabling me to gain the experience and understanding of the way in which a professional kitchen works. Having had a great 18 months at Malmaison I got the opportunity to work at one of Leeds Top Sushi restaurant where I was to learn more about the art of Sushi for which I have always had a passion. 12 months experience gave me a great knowledge and understanding of Sushi that love to incorporate into my dishes today.
